Powdered sugar would be good--totally sweet, but good.
Marci-you can do these with a hand held mixer, you'll just have to do the steps one at a time so you aren't cooking the syrup while you're mixing something else since you won't be able to leave the mixing station (arm cramp) for the egg white beating plus the two 5 minute mixing times. So mix egg whites, then start the syrup cooking and put the gelatin in water while it's cooking. Then it will all be ready for uninterrupted mixing by you with your hand mixer when the syrup hits soft ball stage. It was a good day when I got my Kitchenaid. :)
I made marshmallows a few times, years ago. Instead of spreading in a dish I made dollops on wax paper well dusted with powdered sugar. I most like them coated in somewhat ground up toasted coconut! Umm, heaven. why haven't I done this lately???
Random thought: You should make a cookbook out of all these recipes, so I have them in hard copy when the power goes down and I can't use my computer anymore. :)
