Whew, finally done
Finished cutting up the elk today and only had a few packages that had to be labeled "chunk o' elk"--actually only the backstrap, so that's not too bad. (That's what I do when I'm tired of cutting steaks/jerky--I just package a "roast" type chunk and then cut it up when I thaw it out since I don't like elk roasts too much.) Had the canner running most of the day and the dehydrator going now. I'll have a little picture demonstration on the grain of meat when I feel like putting pictures on, but for now I'm just going to bed. I need to add a better meat knife and sharpening system to my list . . .
