A Thought for All You Canners of Garden Produce

When I'm canning I usually have a good chuckle over a fond memory of a friend of ours who, after receiving some homemade jam from us said: "My mom used to can a lot when I was growing up.  I never could understand why she did it during the hottest part of the summer though."

Thats cute! Today my tomatos are ready, can't go a day longer and it's the hottest day of the year!

"Today while the sun shines...sweat like a hog" (sing that to the hymn tune. I'm with you girl. Why do we do it? Wait...does it make you thin to can in the heat and sweat after picking all those veggies? Maybe if I look through the canning jars at my patootie...but more likely it will look rounder.

I'm getting ready to harvest a large amount of peppermint and spearmint and hopefully make some mint jelly. I've first got to find some jelly jars because all I have right now are big quart jars for other things.

Fact is that sweating is VERY healthy as it allows your body to purge toxins, lightening the load on your kidneys, bowels and liver.
I love to can on hot days since I have health problems that benefit when I sweat. :-D

True True. My mother-in-law says everyone should just move to the Central Valley California. She literally has fresh produce march through November. No need for canning really.
