I love carrots and I appreciate the information you shared here:) Canning is really one of the best ways to preserve food and fun too. In fact, I do it myself and have my own canning salsa recipes which I share to friends and family. Keep up the good work and happy canning! :)

Wow, my canner is like yours but I've always been taught to make sur the jars are covered with water. Of course, like you, I don't have a manual...
