would love to see these re-hydrated to see the consistency. I have tried sweet potato but dehydrated the in disc shapes, but found it really hard to re-hydrate them to an edible consistency. Had never though of grinding them up, thanks for the info :)
I've never thought to do this! And, I'm pretty sure the canned pumpkin is just pumpkin - my little one loves it, especially mixed with applesauce.
Would this work for potatoes also? I am thinking it would be great to make my own instant mashed potatoes to store. How do you store it?
Now that's pretty cool - I had never thought of using dried veggie powder for baby food. One thing I have done is dry spinach and zucchini, grind them up and then sneak them into foods.

What do you use to create the powder and how long do you think it will stay good for?
Okay, the canned pumpkin is 100% pumpkin--fair game for baby food.
Jessica--Yes, it should work for potatoes also. I'd try it.
I'm storing it right now in the ziplocks inside a washed out cookie tin. If you vacuum sealed it in a mason jar (with the foodsaver jar sealer attachment) or put it in something (jar or mylar bag) with an oxygen absorber I'm thinking it would store for a good long time. At least 2-3 years, probably longer. You'd have to do a lot to justify a bucket for it, but if you get that far, a bucket with 3-4 oxygen absorbers would be great for longer term storage also.
Oh yeah, I put the dry chippy stuff in my blender to powder it. The food processor didn't work--the stuff just spun around the bowl. The blender takes a while to get it all powdered, but it works the best. If you're feeling really primitive you could use a mortar/pestle or similar system. It really doesn't need to be totally powdered, it will just rehydrate faster and have a finer texture the finer it is ground.
There's a company that does this and they are amazing!! My kids have tried all 5 of their products and love them!!
